Tex Mex Lasagna

Since it’s Friday, I am very unfocused, and ready to start the weekend, so here’s a quick recipe for you today that I made when we hosted our bible study a few weeks ago.  Seemed like everyone liked it, and I know my family enjoyed the leftovers when they visited this past weekend.  After making it, my suggestion is to add salsa to the mix, as I’ve added in the recipe.  This is apparently a well-known recipe since there are several versions online.  Many sites described it as a “tex-mex lasagna.”

King Ranch Chicken Casserole

i n g r e d i e n t s :

serves about 20

2 large onions, chopped
2 large green bell peppers, chopped,
4 tbsp oil
4 cups chopped cooked chicken
2 cans cream of chicken soup
2 cans cream of mushroom soup
2 cans diced tomato and green chilies
1 tsp chili powder
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp pepper
24  6 in. corn tortillas
1 large jar medium salsa
4 cups shredded Cheddar cheese

d i r e c t i o n s :

1. Saute onion and bell pepper in hot oil in a large skillet over medium-high heat for 5 mins. or until tender.  Stir in chicken and next seven ingredients.

2. Cut or tear tortillas into one inch squares.

3. Layer bottom of two lightly greased 9 x 13” pans with tor ill tortilla squares.  Cover with chicken mixture, then salsa, then cheese.  Repeat three times (or until you run out.

4. Bake at 350 for 30 to 35 minutes.

    This looks yummy, but what about a layer of beans? Top it off with sliced avocado? Chopped cilantro? Still — what an idea! I will try this 🙂

    I’ve made this before, w/out the soup (don’t think it needs it), and without meat. Black beans and of course salsa! Why would you not put salsa in it if it’s Tex Mex?

    It’s very good, layered with corn tortillas, beans, salsa, cheese, and plain yogurt (in place of sour cream), and any type of other Tex Mex veg. you can think of. Cilantro? Sure. Avocados? Yes! I don’t like green bell peppers, so if I added bell pepper, would use red bell pepper. Could you saute some onions and add them? Why sure! And cumin is a necessary component, in my book. I used homemade black beans, which already had garlic and onion, so didn’t add them when I made the casserole. But if your black beans are canned and lack flavor, then by all means add those savory ingredients.

    I don’t tear the tortillas — no need. I do fry them briefly in seasoned oil (tomato sauce, ground red chili pepper, cilantro), to soften them. Then I put on the bottom, slightly overlapping, and do the same for each layer. After they bake they are so soft it’s easy to cut right through them. The tearing step is unnecessary and time consuming, imo.

    This recipe has been around for a long time and is obviously easy to adapt to your own personal tastes. But a word of warning about the soups — a whole lot of sodium in there, so if you can skip them, I would.

      Wow, love all of your suggestions! I think some cumin and avocado would be wonderful with it, and the salsa on the reheated leftovers definitely added some much needed kick to it. Thanks for sharing!
