Graham Cracker Chocolate Eclair

I am so excited to share this recipe with you today.  This is another family favorite from the hub’s side of the family, and the best part is it’s low-fat, low-calorie – but tastes sinful.  Thankfully you won’t have to repent at the gym after indulging in this easy to assemble dessert.

Graham Cracker Chocolate Eclair

i n g r e d i e n t s :

1 box of low-fat graham crackers
2 small packages sugar-free instant vanilla pudding
3 cups skim milk
12 oz. light whipped topping thawed
1 small package sugar-free instant chocolate pudding
2 tsp. vanilla extract
1 pinch of instant coffee

d i r e c t i o n s :

1. Line the bottom of a 9 x 13 pan with a single layer of graham crackers.

2.  In a medium size mixing bowl, whisk vanilla pudding, 1 1/2 cups of milk and 1 tsp of vanilla extract together.  Let sit for a few minutes to set up.

3.  Gently fold in whipped topping until combined and pour half of the pudding over the layer of graham crackers.

4.  Make a second graham cracker layer, and cover with remaining pudding.

5.  Make a final layer of graham crackers.  In a smaller mixing bowl, whisk chocolate pudding mix, 1 1/2 cups skim milk, vanilla extract and instant coffee.  Let sit for a few minutes to set up.  Spread over graham crackers. Best if refrigerated overnight.

Now if you’re not worried about calories – I can only imagine how good this would taste with regular pudding, whipped cream and graham crackers, and instead of using the chocolate pudding using frosting.  Either way I’m sure both versions will knock your socks off!  Let me know if you give it a try!
