Vegetable Soup for the Sickly

Last week Scott wasn’t feelin’ the best.  Just typical winter stuff: sore throat, tired, headache, blah feeling…so he needed some comfort food.  No matter what kinda cook you are as a wife, we all have to admit that there are going to be a few dishes you can never out-do the mother-in-law on, and one of Scott’s Mom’s best is her vegetable soup.

To prove the point: Scott (and at least one of his brothers) are not big fans of vegetables.  Somehow, the two of them ADORE this recipe that stars their arch-nemesis, so it’s got to be good.  It’d be like a vegetarian enjoying a large meat lovers pizza…

So I e-mailed her for the recipe, and she shared with me and “sissy.”

Spivey Vegetable Soup

i n g r e d i e n t s :

1 lb. ground hamburger meat
Salt and pepper to taste
1 16 oz can of crushed tomatoes
1 can of green beans
1 can of corn
1 bag of frozen baby lima beans (I left these out)
2 cups peeled and diced carrots
4 medium red potatoes, cleaned and diced into cubes
2 cups chicken or vegetable broth

d i r e c t i o n s :

1. In a large pot, brown meat and season with salt and pepper.  Once cooked through, drain all the grease.

2. Return meat to the pot, and add tomatoes, green beans, corn, carrots, potatoes and stock.  Stir well to make sure it’s well combined.  Let simmer for an hour.

3. Top with cheese, sour cream and/or corn chips. Enjoy!

(This would go very well with a side of Cornbread)

    I’m loving your posts! I’ll have to try this soup with my veggie phobic husband too! I usually just puree the veggies and hope they are hidden in a sauce or soup! Your photos are making me super jealous too! Keep at it!
