White Chicken Chili Goodness

There’s nothing better to kill that chill that runs through your body this time of year, than a big bowl or cup of something warm and delicious.  I’m a big big fan of soup, maybe because it’s like a liquid casserole: one pot, lots of ingredients, TONS of deliciousness.  Chili is something I categorize under soup, though it may not be it’s rightful place, but it’ is warm and kinda soupy.  This recipe I’m about to share was from my new found friend Kathryn, who has been beyond welcoming and made our transition so much easier – truly a God send.  She and her husband hosted bible study the other night and this is what she made.  I loved it!  The best part was she topped it with Fritos® Corn Chips and cheese.  It is amazing, and I have made it twice since she shared the recipe. (Thank you for sharing!)

The best thing about this recipe for me, is when you roast a big batch of chicken breasts, you can save some of the meat to pull apart later in the week to use for this chili.  It’s super easy, and soup-er yummy.

White Chicken Chili

From the kitchen of Kathryn at Love and Baked Spaghetti

i n g r e d i e n  t s :

2 garlic cloves, minced
2 pablano chilis or 1 green bell pepper, chopped
1 red bell pepper, chopped
2 tablespoons olive oil
Medium onion, chopped
McCormick® White Chicken Chili Seasoning packet
3 cups shredded chicken
2 cans diced zesty tomatoes
1 can navy beans
1 can black beans, rinsed
2 cups chicken broth

d i r e c t i o n s :

1.  In a large sauce pan, drizzle olive oil to coat bottom, and turn heat to medium high.  Saute pablanos (or green bell pepper), red pepper and onion for 5 to 7 minutes.  Add garlic and saute for 1, but do not burn your garlic!

2. Add seasoning packet, chicken, tomatoes, navy beans, black beans and chicken broth.  Stir to combine.

3. Reduce heat to medium, and simmer for 1 hour.

4. Top with cheese, sour cream and/or corn chips.
